The Indian Pantry Starter List for UAE Kitchens

A working Indian pantry needs about 20 items: one basmati and one everyday rice, three or four dals, chickpeas, atta and besan, cooking oil, eight core spices, ginger garlic paste and two chutneys. With these on the shelf you can cook dal-chawal, sabzi, roti, biryani, chaat and snacks without a special shopping trip.
Setting up a kitchen in Dubai, Abu Dhabi or Sharjah is easier than ever, but supermarket aisles can make it tempting to buy everything at once. This list is built around what actually gets used in a vegetarian Indian home cooking four to five times a week, in sensible starter quantities for a household of three to four.

Rice: two bags cover almost everything
Keep one basmati for occasions and one everyday rice for daily meals. Basmati such as Nitra Khaas Basmati Rice handles pulao, jeera rice and family biryani. - Moong dal: khichdi, light dal and chilla; cooks in about 20 minutes.
- Masoor dal: the fastest weeknight dal, no soaking.
- Chickpeas: chole, chana chaat and hummus. Soak overnight.

Flour, oil and sugar
Chakki atta is whole-wheat flour stone-ground for soft rotis, parathas and puris. A 5 kg bag is the usual size for a family making rotis most days. Besan (gram flour) covers pakoras, chilla, kadhi and besan ladoo. Keep a neutral cooking oil for tadka and frying, and a small jar of ghee for finishing dal and rice.
Spices: the core eight, then build
You do not need thirty spices to start. These eight make most North and South Indian vegetarian dishes:

Pastes and chutneys: the weeknight shortcut
A jar of ginger garlic paste saves 10 minutes of peeling and grinding on every curry. Use about 1 tablespoon for a curry serving four. Keep a green chutney for sandwiches and chaat, and a sweet date tamarind chutney for samosas, bhel and dahi puri. A ketchup and an eggless mayo cover sandwiches and kids' snacks.
Storing a pantry in UAE heat and humidity
- Use airtight containers. Transfer rice, dal and flour from open bags into sealed jars or bins. This keeps out humidity and pantry insects.
- Keep spices away from the hob. Heat and steam fade aroma quickly. A drawer or cupboard away from the stove is better than a rack above it.
- Refrigerate atta in summer if you buy large bags, or buy smaller bags more often. Whole-wheat flour keeps for 1 to 3 months in a cool cupboard.
- Refrigerate opened pastes and chutneys and use a dry spoon every time.
- Label and date each jar. Use the oldest first.
