Chana Dal Fry with Ghee Tadka

Split chickpea lentils cooked until soft but still slightly grainy, finished with a rich, smoky ghee tempering.

Method

Cook the dal
Pressure-cook the chana dal with turmeric and water for 3 whistles — you want it soft but still holding some texture, not fully mushy.

Season
Season the cooked dal with salt and stir gently, keeping some grain intact.

Make the tadka
Heat the ghee in a small pan, add cumin seed, dried chillies, garlic and asafoetida, and fry until the garlic turns golden and fragrant.

Combine
Pour the sizzling tadka over the dal and stir once to combine.

Finish
Garnish with coriander and serve hot with rice or roti.
Nitra tip
Chana dal cooks faster than toor dal and can turn mushy quickly — check it a whistle earlier than you'd expect the first time.
