Method

  1. 1

    Blend the batter

Drain the soaked moong dal and blend with a little water to a smooth, pourable batter, similar in consistency to pancake batter.

  2. 2

    Season the batter

Stir in the ginger, green chilli, cumin seed, chopped onion and salt.

  3. 3

    Heat the griddle

Heat a flat griddle or non-stick pan over medium heat and grease lightly with oil.

  4. 4

    Cook the cheela

Pour a ladle of batter onto the griddle and spread into a thin circle. Drizzle a little oil around the edges.

  5. 5

    Flip and finish

Cook 2–3 minutes until the base is golden and set, then flip and cook the other side for a further 1–2 minutes.

  6. 6

    Serve

Serve hot, folded in half, with Nitra Coriander Chutney or plain yoghurt.

Nitra tip

If the batter is too thick to spread easily, thin it with a splash more water — it should pour like a loose pancake batter.
