Mustard-Tempered Curd Rice

A cooling, tangy rice dish finished with a classic South Indian mustard-seed and ginger tempering.

Method

    Mash the rice

    Mash the warm rice lightly with the back of a spoon so it can absorb the yoghurt smoothly.

    Mix in yoghurt

    Stir in the yoghurt and milk gradually until creamy, and season with salt.

    Temper

    Heat the oil, add mustard seed, curry leaves and ginger, and fry until the mustard crackles.

    Combine

    Pour the tempering over the curd rice and mix through.

    Chill and serve

    Chill for at least 15 minutes before serving cold.

Nitra tip

Curd rice tastes best well chilled, not warm — make it ahead if you have the time.
