A light, Mediterranean-style salad dressed with Nitra's Olive Oil Mayonnaise and finished with feta.

Method

    Combine the leaves and olives

    Toss the salad leaves and olives together in a large bowl.

    Dress lightly

    Add the olive oil mayonnaise and toss gently to coat, being careful not to bruise the leaves.

    Season

    Season with salt and black pepper.

    Top with feta

    Crumble the feta generously over the top.

  5. 5

    Serve

    Serve immediately while the leaves are crisp.

Nitra tip

Dress the salad just before serving — leaves dressed too far ahead will wilt.
