South Indian Mustard-Tempered Vegetable Poriyal

A simple, dry-style vegetable stir-fry finished with grated coconut and a classic mustard-seed tempering.

Method

Temper the mustard seed
Heat the oil and add the mustard seed, frying until it crackles.

Add curry leaves
Stir in the curry leaves and fry a further 15 seconds.

Add vegetables
Tip in the finely chopped vegetables and stir-fry over medium-high heat for 7–8 minutes until tender.

Finish with coconut
Stir in the grated coconut and cook a final 2 minutes.

Season and serve
Season with salt and serve warm as a side.

Chop the vegetables finely and uniformly — poriyal is meant to cook quickly and evenly, almost like a fine dice.
