Walnut Halwa

A rich, warming dessert where coarsely ground walnuts are cooked down in ghee and milk into a fragrant halwa.

Method

Roast the walnuts
Heat the ghee in a heavy pan and add the ground walnuts. Cook over medium-low heat, stirring constantly, for 8–10 minutes until fragrant and lightly toasted.

Add milk
Pour in the milk gradually, stirring to avoid lumps.

Cook down
Simmer, stirring frequently, for 10–12 minutes until the mixture thickens.

Sweeten
Stir in the sugar and crushed cardamom, and cook a further 3–4 minutes until glossy.

Serve
Serve warm, garnished with a few extra chopped walnuts if you like.
Nitra tip
Grind the walnuts coarsely rather than to a fine powder — a little texture is part of what makes this halwa satisfying.
