Yellow Pea Curry

A hearty, coriander-forward curry built on whole dried yellow peas, simmered until tender in a well-spiced gravy.

Method

Boil the peas
Drain the soaked yellow peas and boil in fresh salted water for 30–35 minutes until tender.

Build the masala
Heat the oil and fry the onion over medium heat for 7–8 minutes until golden. Add the ginger and cook a minute.

Add spices and tomato
Stir in the coriander powder and turmeric, then add the pureed tomato. Cook 8 minutes until it thickens.

Simmer the peas in
Add the cooked yellow peas along with some of their cooking liquid, and simmer 12–15 minutes.

Finish
Stir in the garam masala, adjust salt, and garnish with coriander before serving.

Yellow peas hold their shape well even after a long simmer, making this curry satisfyingly chunky rather than mushy.
