Classic Hummus

A smooth, garlicky dip made from cooked chickpeas and tahini — simple to make once the chickpeas are ready, and endlessly useful.

Method

    Blend the base

    Combine the cooked chickpeas, tahini, lemon juice and garlic in a food processor and blend until roughly combined.

    Add oil and spice

    With the motor running, stream in the olive oil and cumin powder, blending until smooth.

    Adjust consistency

    Add cold water a tablespoon at a time, blending between additions, until the hummus reaches a light, creamy consistency.

    Season

    Taste and adjust with salt, more lemon or more tahini as needed.

    Serve

    Spoon into a bowl, swirl the surface with the back of a spoon, and finish with a generous drizzle of olive oil.

Nitra tip

For an extra-smooth hummus, slip the skins off the chickpeas before blending — a little tedious, but noticeably silkier.
