- Serves 4
A warm, creamy pudding made by simmering crumbled whole wheat rusk in cardamom-scented sweet milk. It is a quick way to turn a pack of rusk into a comforting dessert.
Method
- 1
Warm the milk
Bring the milk to a gentle boil in a heavy pan, stirring occasionally.
- 2
Sweeten and flavour
Stir in the sugar and cardamom powder and simmer for 5 minutes.
- 3
Add the rusk
Add the broken rusk and push the pieces under the milk. Cook on low heat for 5 to 6 minutes, stirring gently, until the rusk softens and the pudding thickens.
- 4
Toast the almonds
Meanwhile, warm the ghee in a small pan and toast the sliced almonds for 1 to 2 minutes until golden.
- 5
Finish and serve
Spoon the pudding into bowls and top with the toasted almonds. Serve warm.
Stop cooking when the pudding is still slightly looser than you want. It thickens as it stands, so add a splash of hot milk if it sets too firm.
